In the Instrumental Laboratory of the FEM Sensory Laboratory many different analyses can be performed:

Volatile compounds detection

• With static or semi-static methods (SPME-GC/MS)
• With dynamic methods (PTR-MS, PTR-TOF-MS) in collaboration with the FEM Volatile Compounds Technological Platform

Physical-mechanical measurements

• Structure: texture analyzer with acoustic detector (TA-XT Texture Analyzer) that allows to measure parameters about mechanical and acoustic properties which can be correlated to the food sensory profile.
• Colour: colorimeter (Chroma Meter CR 400)
• Appearance (colour, shape, dimensions): Electronic eye (IRIS Visual Analyzer VA 300)
