In the Sample Preparation Lab products are stored and prepared according to rigorous procedures. Product preparation has a crucial importance as the samples should be prepared excluding any information that could influence the evaluation. The sample products are placed in boxes or glasses and are then presented to the judges in an anonymous way (each sample is marked with a random numerical code) and according to a specific and balanced order.

The delivery of the products to the judges, who are located in the adjacent Laboratory for Individual Evaluations, takes place through small sliding windows that connect the two rooms. The judges can communicate with the staff at any time by pressing a button located in the individual booth, which is controlled from a central panel inside the preparation area and manages red or green lights to signal the status of the request. The laboratory is also equipped with a fully functional kitchen.
The Sensory Lab is on the ground floor of the Palazzo della Ricerca e della Conoscenza (PRC) of the Research and Innovation Centre (CRI) at the Edmund Mach Foundation.
