In the Sample Preparation Lab products are stored and prepared according to rigorous procedures. Product preparation has a crucial importance as the samples should be prepared excluding any information that could influence the evaluation. The sample products are placed in boxes or glasses and are then presented to the judges in an anonymous way (each sample is marked with a random numerical code) and according to a specific and balanced order.

The delivery to the judges who are located in the nearby Individual Evaluation Laboratory occurs through small windows connecting the two environments. The judges have the possibility to communicate with the staff at any time by pressing a button placed into the individual booth. The laboratory is also equipped with a complete kitchen.
