Biography
Rosalba graduated in 2018 in Gastronomic Sciences from the University of Parma.
In 2020 she obtained a master’s degree in Italian Food and Wine at the University of Padua with a thesis on the food consumption of insects and insect-based foods.
Her PhD project is focused on the study of the behavior of the Italian consumer regarding the use of insects as an ingredient for feed in the supply chain of products of origin animal.
Research activities
Rosalba is currently in the final phase of her PhD project "IUSAFE", and is writing the scientific papers related to the results obtained. Specifically, she has been studying consumer behaviour in relation to consumption of aquaculture products and poultry from specimens fed with insect feed.
